Svetlana Elgart arrived in the United States in 1978 after leaving her hometown of Odessa. What she carried with her was more than belongings—it was a philosophy. In her family, meals were never just food on a plate. They were daily rituals where nutrition met culture, and care was expressed through cooking.
Years later, as a mother navigating the American education system, she noticed an important gap in children’s learning. School cafeterias provided calories but did not necessarily offer the deeper understanding of nutrition and wellness that could support long-term health. Health education was often absent from core curriculums, and this gap inspired her mission.
The Growth of Rainbow Chefs Academy
In 2020, her initial enrichment program evolved into a comprehensive K–12 wellness education platform. Rainbow Chefs Academy (RCA) was designed to integrate into classrooms, offering a curriculum that combines nutrition, life skills, and cultural education.
“Education should nourish the body, mind, and spirit,” Svetlana says. RCA’s modules go beyond memorizing facts about health. Students engage with recipes, explore culinary traditions from around the world, and develop practical skills that could serve them well into adulthood.
Innovation Without a Traditional Kitchen
One of RCA’s most effective tools is the RCA Backpack, a portable kit that transforms any classroom into a functional culinary space—no permanent kitchen required. Students participate as chefs, scientists, and explorers, with activities grounded in Common Core and CASEL standards and supported by NGSS and STEM principles.
This approach also helps connect academic concepts with real-world applications, making lessons more engaging and memorable. With in-person, virtual, and hybrid formats, RCA can be delivered in schools regardless of location or income level. The train-the-trainer model equips educators to lead wellness programs long after the initial training, creating potential for lasting change.
Measurable Reach and Recognition
RCA has already impacted more than 65,000 students nationwide. Behind that number are children who now see food as a source of focus, health, and self-respect.
The academy is WASC-accredited and has been featured on platforms including Yahoo Finance, CanvasRebel, and Legend Women’s Magazine. Svetlana’s work has drawn attention from thought leaders such as Dr. Robert Lustig and has been highlighted on podcasts, including Amazing Women and iHeart Radio.
Building on Experience to Drive Change
Svetlana’s path from entrepreneur to education innovator combined business expertise from the University of North Texas with nutrition training from Bauman College. This combination allowed her to develop lessons that engage multiple senses—taste, memory, and experience—to deepen learning.
Her perspective as both a mother and an immigrant shaped RCA’s commitment to reaching communities often underserved by public education systems.
Expanding RCA’s Impact Beyond Classrooms
Svetlana’s mission has leapt off the lesson plan and into the literary world. In July 2024, Svetlana published Cooking Healthy with Rainbow Chefs: Cookbook for Kids, a colorful collection of recipes that aim to make healthy eating more accessible and enjoyable. She is also developing Kale the Cupboard Monster, a children’s book series designed to encourage positive food choices.
These projects extend RCA’s mission beyond schools, bringing wellness education into homes. They are part of RCA’s broader belief that “wellness literacy should begin early, live everywhere, and be delivered with joy.”
Prioritizing Health Equity
From the beginning, RCA was built to serve students who might otherwise be left out of wellness initiatives. Through partnerships with nonprofits, school districts, and community organizations, the program provides access where it is needed most.
Lessons often serve as cultural exchanges, where global flavors and family histories are celebrated. Students come to see their cultural background as a strength, reinforcing RCA’s message that healthy habits are connected to identity and community.
Scaling with Purpose
In the near term, Svetlana plans to expand district partnerships, grow RCA’s learning management system, and release additional installments of Kale the Cupboard Monster. Long-term goals include integrating RCA into national curricula, exploring international expansion, and developing adult wellness programs using the same hands-on approach that has been well received with youth.
A Practical Approach to Wellness Education
Rainbow Chefs Academy gives students more than cooking skills—it teaches them practical habits, critical thinking, and leadership through the lens of nutrition. Under Svetlana Elgart’s guidance, food becomes a tool for learning, empowerment, and connection.
By blending cultural awareness, academic standards, and hands-on activities, RCA is helping to redefine how schools approach health education—and how students carry those lessons into their futures.
